About Pidom

Pidom ovens come from Pi.Dom, an oven maker in Cadoneghe, near Padua in Italy, which also makes ovens under the Piron name. Its Explora combi ovens are designed in Italy for gastronomy, bakery and pastry kitchens.

Excell's range covers Explora Evoluzione touchscreen combi steam ovens in 4, 6, 10 and 20-pan sizes. Leonardo combi steam ovens come in the same sizes, with three fan speeds and AISI 304 stainless chambers. Compact four-tray Marconi convection ovens come manual or digital, with or without humidity. Stands, a roll-in trolley and baking trays complete the line.

Worth knowing

Seven-inch display
Explora ovens have a 7-inch display, up to 1,000 stored recipes, 40-step cooking and a separate timer for each tray.
Probe and Delta-T
Cook to a core temperature with the probe, or use Delta-T cooking. Convection runs from 30 to 270 °C.
Washes itself
Explora ovens have three automatic wash cycles and a rinse cycle, and a weekly wash can be scheduled.
Compact convection
The larger Marconi ovens take four 600 x 400 or GN 1/1 trays at 6.5 kW. Humidity models add steam for browning bread.
