Choosing commercial refrigeration in South Africa

Domestic fridges fail in commercial kitchens for reasons that have nothing to do with size. Here's what to check instead.

The most expensive fridge in a commercial kitchen is the domestic one someone bought to save money. It fails in the second summer, and it takes a service of stock with it.

Size is rarely the reason. Here is what actually is.

Ambient rating is the whole game

Every commercial fridge carries a climate class — the ambient temperature it is rated to hold its setpoint in. A unit rated to 32°C is not being modest; it genuinely cannot hold temperature above that, and it will run continuously trying.

A Kimberley or Upington kitchen in February is not a 32°C room. Between the ambient outside, the cooking line and the poor airflow most back-of-house layouts have, the air going into the condenser is often well past 40°C.

Specify for the room the fridge will actually stand in, in the worst month, with the extraction running. This single decision separates equipment that lasts a decade from equipment that dies in eighteen months.

Fan-forced, not static, for anything opened often

Static cooling is quiet, cheap and fine for a unit that gets opened twice a service. Fan-forced (dynamic) cooling recovers temperature quickly after the door has been open, which is what a working line fridge does forty times an hour.

If the unit is on the line, it needs fan-forced cooling. If it is a back-of-house holding fridge that gets opened at delivery, static is fine and cheaper.

Count doors against how the section actually works

Door count is a workflow decision disguised as a capacity decision.

Two single-door under-counters in the right places beat one double-door in the wrong place, because the cook does not have to leave the section. Conversely, a single large unit is cheaper to buy and run than two small ones.

Walk the section in your head at peak: who opens what, how often, and how far do they move. Then choose the door layout.

Ask about the gas and who can charge it

Refrigerant matters for two practical reasons: what it costs to re-charge, and whether anyone near you is licensed and equipped to do it.

Newer low-GWP refrigerants are the right long-term choice, but confirm that your supplier's technicians actually work with that gas and hold stock of it. A sealed system is not a maintenance item until the day it is, and then it is the only thing that matters.

The things that are not on the spec sheet

  • Door seals. They are the first thing to fail and the cheapest thing to replace. Check they are a stocked part.
  • Castors and levelling. A unit that cannot be pulled out for cleaning will not be cleaned, and a blocked condenser is the single most common cause of failure we attend.
  • Condenser position. Top-mounted stays cleaner in a greasy kitchen; bottom-mounted is easier to service and cheaper. Neither is wrong; pick knowingly.
  • Digital controller. Being able to read the actual temperature, and the fault code, saves a callout.

Buy the service, not just the box

Refrigeration is the category where after-sales support matters most, because a failure has a clock on it: stock spoils.
